Hello Friends! I wanted to share a super simple, tasty, and healthy recipe with you today. This slaw can be adjusted to your taste. The most recent time I made it, I used:
4-5 medium carrots, shredded in food processor
1/2 medium head of purple cabbage, shredded in food processor
1/2 cup raisins
1/2 cup pure tahini sauce (I like the ones that have one ingredient – sesame seeds)
1/2 cup chickpea miso (you can use soy-based miso too)
water to thin out dressing
handful of mint leaves coarsely chopped or torn
Combine shredded carrots, cabbage and raisins in a large bowl. In another bowl, combine tahini and miso and whisk together with enough water to reach your desired dressing consistency. Pour onto carrot and cabbage mixture and sprinkle mint on top.
*Notes – you can definitely play with the ingredients here – take out the raisins if you don’t like them, add chopped scallions and/or shredded dinosaur kale, goji berries, a sprinkle of toasted sesame seeds, whatever you like!
*You can do this without a food processor too – by using a box or flat cheese grater. To get the “slawness” you’ll want to grate the carrots and cabbage.
